Coffee is great.
So let's combine the two!
This was my thinking in making up these little treats for some friends of mine who are fellow coffee fiends. Coffee is naturally a great combination with chocolate. The espresso powder as well as the brewed coffee in these chocolate brownies amps up that rich flavour!
Espresso Brownies
Prep time: 15 minutes
Cook time: 30 minutes
Total time: 45 minutes
Ingredients
- 4 oz unsweetened chocolate, chopped
- 2 oz semi-sweetened chocolate, chopped
- 3/4 cup unsalted butter, cubed
- 3 large eggs
- 1 3/4 cup white sugar
- 1/4 tsp salt
- 2 tsp vanilla extract
- 1 tsp instant espresso powder
- 2 tbsp cocoa powder
- 3/4 cup brewed coffee
- 1 cup all-purpose flour
Directions
1- Preheat the oven to 350 degrees F. Spray/grease a 9x13 pan.
2- Chop chocolate and butter and place in a small bowl. Microwave in 1 minute intervals and stir in between heating. Do this about 3 times or until the chocolate and butter are melted and incorporated.
3- In a large bowl, mix together eggs, sugar, salt, vanilla, espresso powder, and cocoa. Gently mix in the chocolate/butter mixture until blended. Add in coffee and mix well. Sprinkle in the flour and mix until combined and no streaks of flour remain. Pour batter into the prepared pan and spread evenly.
4- Bake in preheated oven for about 30-35 minutes until a tester inserted in the centre comes out cleanly.
So invite some friends over, brew a fresh pot of coffee, and enjoy these treats with great conversation!
